Ossian 2008 (Verdejo)

VINTAGE: Ossian 2008 was characterized by a very dry winter and one of the wettest springs in recent years, with the last rain on 24 June. These shoots were delayed and favored a major force in the vineyards.
Veraison also delayed compared to regular dates. The summer was very dry, with moderate temperatures, so that the phenolic maturation of grapes (accumulation of polyphenols) progressed more rapidly than alcohol ripening (accumulation of sugars). This is great for white wines.
In early October, the grapes were not fully mature so we had to wait, even at the risk of losing the crop if the rains had made its appearance. Fortunately, despite a slight frost, and start ripening harvest came on October 14 and can clean and harvest grapes with extraordinary levels of acidity.
The health of the grapes were good, collecting all the harvest by hand and with great care.

GRAPES: Ossian 2008 is 100% Verdejo, centuries old vines pre-phylloxera in ungrafted. The grapes come from our 15 hectares of vineyards in Nieva (Segovia) with certified organically grown (without fertilizers synthesis or herbicides, or pesticides of any kind), plus other 15HA, also in ungrafted, we have leased and are grown under our strict supervision.

WINEMAKING: Handpicked for Ossian 2008 in boxes of 15 Kg rigorous inspection selection table. Whole clusters, without stemmed and pressed very smooth, low performance, using only the yolk musts. Fermentation with indigenous yeasts themselves. After alcoholic fermentation the wine remained in French oak barrels - 40% new, 30% wine and 30% of two-to complete wines aged for nine months in Burgundian style, with bastoneo on its lees.

WINE: All of these processes to create Ossian 2008 were carried out under the control and supervision of Pierre Millemann, a prestigious French winemaker who develops his work for years in Burgundy.

EMBOTELLADENOMINACIÓN PRODUCTION AND ORIGIN: This vintage we have produced 39. 000 bottles and 1. 000 magnum. The wine was bottled on September 8, 2009. 50% of production is exported.
